The reason why Ninja Warrior would use multi cam in there studio based show is to show the coverage of action because the contestants are doing this live and if there fell there will be more of a chance on capturing it on a multi cam then a single camera. We can see see at 2:40 that the contestant loses grip of the handle which allows the multi cam to capture instantly, this would have been difficult to do with a single camera because the action is to fast for the camera operator to react to.

The practice reasons of why ninja warrior would record there shows with multi camera is to make the footage spontaneous and live, This because ninja warrior is live it show through the studio, there are multiple camera recoding the action that may be spontaneous and my be hard to capture again at that moment on the show, for example is there was not multiple camera and the contestant fell it would be hard to camera again.
